1 cup plain flour 1 cup sugar 1/2 cup oil 60gm dark cooking chocolate, melted 1 tsp vanilla essence 1 tsp baking powder 1/4 tsp salt 2 eggs Icing sugar for rolling
Combine sugar, melted chocolate and oil in a large bowl - mix together. Add eggs and vanilla and beat well. Sift flour, salt and baking powder together then add them to the chocolate mixture in three batches, mixing well after each addition.
Cover the dough and chill it in the fridge for at least two hours.
When you are ready to cook, preheat oven to 180°C. Line or grease two baking trays.
Spoon out the chilled dough using a teaspoon. Spoon it straight into a bowl of icing sugar, then use that to let you make balls about walnut sized (don't make them too big - you should get around three dozen out of the mixture). Make sure they have a good coating of icing sugar.
Place the balls on the prepared trays, not too close together - they spread. Don't press them down.
Bake for 10-12 minutes. If you have made the biscuits bigger than suggested, they will need a few more minutes of cooking time.
Leave them on the tray to cool and solidify for a few minutes before moving them to a rack.
