275 gms plain flour 100 gms butter 2 teaspoons ground ginger 100 gms light brown sugar 1 teaspoon ground cinnamon 150 gms black treacle 1 teaspoon bicarb soda 150 gms golden syrup 2 eggs, beaten 150 ml hot waterSieve the flour, spices and bicarb soda together in a bowl. Put the butter, sugar, treacle and golden syrup into a saucepan and stir until melted. Pour the melted syrups into the dry ingredients, together with the water and eggs. Mix well.
Pour the batter into a lined and greased 23 cm. square shallow tin. Bake in a preheated oven at 180°C. for 35-40 minutes. Keep for one day before cutting into squares and serving.
