2 oranges (washed) 150gm butter 1 cup caster sugar 4 eggs 1 cup dessicated coconut 1.5 cups plain flour 1.5 tsp baking powderPreheat the oven to slow (160 °C). Grease and line 22 cm. round cake tin.
Place whole oranges in a saucepan of boiling water over medium-high heat. Cover and boil for 30 minutes, or until soft. Remove oranges and set aside to cool slightly, then chop them roughly and remove any seeds.
Sift flour and baking powder together.
Process oranges in a food processor until pureed. Add butter, sugar, eggs, coconut, flour and baking powder and process until smooth.
Pour into prepared tin. Bake for one hour or until golden and cooked when tested with a skewer. Cool in tin before serving warm, with orange syrup.
