Kaye and Geoff's Recipes - Cakes
Pumpkin Fruit Cake
1 cup mashed pumpkin 500 grams mixed dried fruit
60 grams walnuts (optional) 1 tablespoon honey
1 cup orange juice 2 eggs
1 teaspoon mixed spice 1 teaspoon bicarb soda
250 grams self raising flour (preferably wholemeal)
Heat oven to 165°C (325°F)
- Place fruit, orange juice and honey in saucepan and bring to boil.
- Remove from heat and add the bicarb soda.
- Cool. Sift flour and spice together. Add flour and pumpkin to fruit and mix thoroughly.
- Fold in the beaten eggs.
- Place mixture in a lined 20 cm. round cake tin.
Bake cake for 1.5 hours or until cooked as desired.
Notes:
- The mix of fuits can be changed if desired. Chopped dried apricots, ginger or figs may replace some of the dried fruit to change the flavour.
- The mixture can also be made into muffins t hat will require a shorter cooking time.
