Pumpkin Fruit Cake


1 cup mashed pumpkin		500 grams mixed dried fruit
60 grams walnuts (optional)	1 tablespoon honey
1 cup orange juice		2 eggs
1 teaspoon mixed spice		1 teaspoon bicarb soda 
250 grams self raising flour (preferably wholemeal)

Heat oven to 165°C (325°F)

  1. Place fruit, orange juice and honey in saucepan and bring to boil.
  2. Remove from heat and add the bicarb soda.
  3. Cool. Sift flour and spice together. Add flour and pumpkin to fruit and mix thoroughly.
  4. Fold in the beaten eggs.
  5. Place mixture in a lined 20 cm. round cake tin.

Bake cake for 1.5 hours or until cooked as desired.
