Pasta with creamy herb sauce

500 gms green "Angel's hair" pasta or vermicelli	1 1/2 cups cream
4 tablespoons ghee					1/2 teaspoon salt
pinch of grated nutmeg					pinch of cayenne pepper
1/4 cup freshly grated Parmesan cheese			1 cup fresh chopped mixed herbs

Some of the cream could probably be substituted with yoghurt? Place the cream, butter, salt, nutmeg and cayenne in a heavy bottomed saucepan and simmer over a low heat for 15 minutes. Whisk in cheese and herbs and simmer while the pasta is cooked.

Cook the pasta in plenty of boiling salted water until "al dente" - cooked but still firm. Drain the pasta and divide it among four individual bowls. Top with the sauce and serve immediately. Could also include bacon pieces and/or mushrooms.
